Dairy-Free Vanilla Cake

This year for my niece’s birthday cake she requested for me to make her a dairy-free cake. I was unsure about how this would go. I mean, a cake with no butter or eggs…?

After a quick search on Pinterest, I discovered a cake recipe called “depression cake” that was also dairy-free. This cake recipe got its name from the era of which it was developed.

During the Depression, ingredients were scarce and hard to come by. This dairy-free cake recipe was the perfect way to be able to bake a cake during this time.

I was very surprised at how amazing this cake tasted and immediately wanted to share with all of you in case you ever get a request to make an allergy-friendly dairy-free cake. Or if you ever want to step up your baking game and try one for yourself!

Let’s get into baking this cake!

Start by gathering you supplies and ingredients.

Supplies needed:

Large mixing bowl

A whisk

Cake pans (I used three 6 inch round pans but you can also use a large rectangle one)

Ingredients needed:

3 cups flour

2 cups sugar

2 tsp baking soda

1 tsp salt

2 tsp white vinegar

1/2 cup + 2 Tbsp vegetable oil (or desired oil)

3 tsp vanilla extract

2 cups water

Instructions:

  1. Preheat oven to 350°. Prepare three 6 inch cakes pans with parchment paper
  2. In a large mixing bowl combine dry ingredients (flour, sugar, baking soda, and salt)
  3. Make three “craters” in the dry ingredients. In one hole add the white vinegar, in another add oil, and the last crater add vanilla extract
  4. Pour the 2 cups of water over the top of all the ingredients and whisk until combined
  5. Divide batter evenly between your three cake pans
  6. Bake in preheated oven for 30-40 minutes or until a toothpick inserted comes out clean
  7. Let cool in pans for 10 minutes then remove from pans and finish cooling completely on wire racks

Notes

You can use gluten free flour if desired.
You can also substitute the sugar for another sweetener
And You can use any type of oil you prefer! 
Another option is to use a rectangle cake pan instead of the rounds
