This keto vanilla cake recipe is the easiest low-carb dessert I have made so far!

Last summer I made a life changing decision. I decided to try the keto diet and successfully lost 30 pounds! Changing the way I ate made me a better person all around. I feel better, I look better, and I enjoy cooking meals for my family because I know it is healthy.

One of the hardest challenges when eating low-carb is NO SUGAR! I love dessert and every night I want something sweet and delicious. I am always on Pinterest looking for new keto friendly desserts.

The first one of these cakes I made was for a friends birthday. It came out so good I wanted to share it with you all. Here is a picture of her birthday cake!

Let’s get into making this cake!

First, you are going to need to gather your supplies

Mixing bowl

Rubber spatula

Whisk

Cake Pans (I use two 6 inch round)

Ingredients needed are

4 eggs

1/2 cup of swerve granulated (or other low-carb sugar substitute)

2 Tablespoons coconut oil

1 teaspoon vanilla extract

2 cups almond flour

1 teaspoon baking powder

For the frosting you will need:

2 Sticks of unsalted butter, room temperature

3 Cups Swerve confectioners sugar

1 teaspoon vanilla extract

Instructions:

Pre heat oven to 325°. Prepare two 6 inch cake pans with parchment paper

In a mixing bowl combine eggs, sugar replacement, coconut oil, and vanilla extract

Add almond flour and baking powder to egg mixture. Mix until combined

Pour batter evenly into prepared cake pans

Bake for 20-22 minutes or until tooth pick inserted comes out clean. (The cake will not rise much)

Cool completely before removing from cake pans

For the frosting I made a batch of my classic american buttercream (found here) and replaced the powdered sugar with Swerve confectioners sweetener.
