These cookies are tasty and easy to make
I started using this peanut butter cookies recipe when my husband and I first moved into our house.
I had a Kitchen-Aid gifted to me as a house warming present. For the record I still use that one to this day! Check out the different models of Kitchen-Aids here
I only used my Kitchen-Aid for just making these delicious peanut butter cookies. The recipe was in the manual that came with it.

To make the peanut butter cookies you will need:
-1/2 Cup peanut butter
-1/2 Cup butter, softened
-1/2 Cup granulated sugar
-1/2 Cup brown sugar
-1 egg
-1/2 tsp. vanilla
-1/2 tsp. baking soda
-1/4 tsp. salt
-1 1/4 Cup all-purpose flour

Directions:
Pre-heat oven to 375°
In a medium bowl, whisk dry ingredients together (baking soda, salt, and flour).
Place peanut butter and butter in your mixing bowl with the paddle attachment. Beat on speed 6 for one minute. Stop and scrape the bowl.

Next, add in both sugars, egg, and vanilla to mixer. Mix on speed 4 for one minute. Stop and scrape the bowl.

Put your mixer on stir speed and gradually add in the dry ingredients for 30 seconds.

Roll dough into 1 inch balls and place 2 inches apart on ungreased cookie sheet. You can double the size of the balls for larger cookies.
Using a fork make a criss-cross pattern on top of the cookies to flatten the balls slightly.

For 1 inch cookies- bake for 5 minutes in oven. Allow cookies to cool for 1 minute on cookie sheet. Remove from pan and cool completely on a wire rack.
For 2 inch cookies- bake for 8 minutes. Allow to cool for 1 minute on cookie sheet. Transfer to rack and cool completely.

This recipe will make 44 small cookies, or 22 big cookies.
