Dairy Free Vanilla Cake

Also known as "depression cake" this dairy free cake uses simple ingredients and tastes amazing!

Equipment

Ingredients

  • 3 cups flour
  • 2 cups sugar
  • 2 tsp Baking Soda
  • 1 tsp salt
  • 2 tsp white vinegar
  • 1/2 cup + 2 Tbsp vegetable oil
  • 3 tsp vanilla extract
  • 2 cups water

Instructions

  • Preheat oven to 350°. Prepare three 6 inch cakes pans with parchment paper
  • In a large mixing bowl combine dry ingredients (flour, sugar, baking soda, and salt)
  • Make three "craters" in the dry ingredients. In one hole add the white vinegar, in another add oil, and the last crater add vanilla extract
  • Pour the 2 cups of water over the top of all the ingredients and whisk until combined
  • Divide batter evenly between your three cake pans
  • Bake in preheated oven for 30-40 minutes or until a toothpick inserted comes out clean
  • Let cool in pans for 10 minutes then remove from pans and finish cooling completely on wire racks

Notes

You can use gluten free flour if desired.
You can also substitute the sugar for another sweetener
And You can use any type of oil you prefer! 
Another option is to use a rectangle cake pan instead of the rounds
